Origin: Struma River Valley

Tasting notes:
Pale pink color, with a fruity aroma of cherries, raspberries and wild strawberries. Delicate perlage, long and juicy finish.

Vinification and aging:
Naturally sparkling wine, made by the traditional method (méthode traditionelle). The harvest begins in early September, when the sugar content is lower and the acidity is higher. The grapes are hand-picked into crates during the coolest part of the day and quickly transported to protect them from oxidation. Upon arrival at the winery, they are loaded into a press for a short maceration and subsequent delicate separation of the grape must. Fermentation takes place in 6 m3 stainless steel vinifiers at a controlled temperature up to 18°C for 1 month. During subsequent bottling, a tirage liqueur (liqueur de tirage) is added to the wine and it is placed horizontally for secondary fermentation. It remains there for 2 years, during which time the remuage process is carried out. This is followed by disgorgement (dégorgement), dosage (dosage) and aging in the bottle for another 6 months before being released to the market.
