This style of sparkling wine originated in France and is known as méthode ancestrale. Developed in the 16th century, it is the oldest way to produce sparkling wine and results from a single, continuous alcoholic fermentation that is stopped approximately halfway through by lowering the wine's temperature to a level where the yeast cells become dormant.
